Chocolate in Ireland is better than anywhere else I have been. Better than the Swiss, better than Germany, better than that stuff they call chocolate from the States. Not sure what they do, but Ireland is the place.

Slightly bitter, just a hint of sweetness, dark, cacao fat in there and and temperature leaving it solid but easy to melt, or frozen just enough not to ice up. Hot days and all.
